Aunt Sandy's Portabello Mushrooms
Serves four
4 - Portabello Mushrooms
1/2 - Diced Green Peppers
1/2 - Diced Yellow Squash
1 - Diced Roma Tomato
4 oz - Shredded Smoked Cheddar Cheese
2 - Diced Garlic
Other Ingredients:
Olive Oil
Basalmic Vinegar
Fresh or Dried Basil
Salt & Pepper
Wash the mushrooms and blot with papertowel. After you have diced the
vegetables just sprinkle them on the mushrooms (top down on a cookie
sheet), then sprinkle with Olive Oil, Basalmic Vinegar, Basil, Salt &
Pepper . Then broil approximately 5-7 minutes (watch that cheese doesn't
burn).
I didn't really have the garlic (instead I used garlic salt). Although I
would have liked to have had the garlic on it. Also, I think the fresh
basil would have been better. I used dried basil (all that Yvonne had).
It was really good and it only counts the oil & cheese as far as weight
watchers or low calorie/fat counts. I had it with rice or you can have it
with anything really.
