Thai Stir-Fried Shrimp
Shrimp and basil cooked with onions, scallions, and tomatoes in roasted red chili paste and seasonings served over jasmine rice.
serves 4-6
6 Tbsp. vegetable oil
6 cloves minced garlic
2 small onions thinly sliced
4 chopped scallions
2 tomatoes quarted and sliced
6 Tbsp. Thai red chili paste
4 Tbsp. Thai fish sauce
2 Tbsp. granulated sugar or coconut (palm) sugar
16 oz. peeled, devained shrimp
30 sweet basil leaves
In a hot wok or skillet heat oil and lightly sautee garlic in oil. Add chopped onion, scallions, tomato and roasted red chili paste. Stir for about a minute. Add fish sauce and sugar, stirring until evenly dissolved. Lastly add shrimp and basil. Cook until shrimp are pink, taking care not to over cook (about 2-3 minutes)
