Thai Stir-Fried Beef and Green Beans
Marinated beef stir-fried with Chinese "long" beans, roasted red chili paste, Thai fish sauce, and coconut sugar served over jasmine rice.
serves 4-6
24 oz. beef, thinly sliced strips
3-5 Tbsp. olive oil
5 cloves minced garlic
5 Tbsp. Thai roasted red chili paste
2 Tbsp. granulated sugar or coconut sugar
4 Tbsp Thai fish sauce (to taste)
24 oz. green or Chinese "long" beans
(cut in 2-inch pieces)
Since this is a quickly prepared meal you will have pleanty of time to prepare for your stir-fry after you have started the rice. If you have 4 guests 2 cups of rice will do the trick. A good FarOut Food's Durty FinGer Cook's rule of thumb is that for every 2 mouths to feed 1 cup of rice will suffice.
Bring 4 cups of water to a boil, add jasmine rice, wait for it to boil again, lower heat to low and cover for twenty minutes. Now begin to prepare the ingredients and by the time your done your guest will know by the fragrance in the air it's chow time.
In a hot wok or skillet heat oil and sautee garlic and marinated beef strips. Add roasted red chili paste, sugar and fish sauce and stir fry on medium heat for an additional 30 secinds. Then add green beans and stir fry about 2 minutes more on high heat.
