serves 4 to 6


3 large boneless skinless chicken breast, cubed
2 large potatoes, peeled and chopped
1 large onion, chopped
1 medium carrot, diced
12 string beans cut into thirds
2 Tbsp. curry powder
4 cloves garlic, minced
1 tsp. cumin powder
2 tsp. cayanne pepper
2 cups flaked coconut
2 cups chicken broth
3 cup water
1/2 cup heavy cream(half-n-half)
2 Tbsp. olive oil/vegetable oil

In a saucepan coated with olive oil slightly sear chicken. Add onions, potatoes, carrots, beans, curry powder, garlic, cumin, cayenne, and coconut; stir and add water as needed until vegetables are tender. Deglaze by adding the remaining water and chicken broth; simmer for 10 minutes or until mixture thickens. Stir in heavy cream and simmer for another 5 minutes.
