In a saucepan coated with olive oil slightly sear chicken. Add onions, potatoes, carrots, beans, curry powder, garlic, cumin, cayenne, and coconut; stir and add water as needed until vegetables are tender. Deglaze by adding the remaining water and chicken broth; simmer for 10 minutes or until mixture thickens. Stir in heavy cream and simmer for another 5 minutes. Top each serving with toasted coconut |
