serves 6 to 8


1 lb. cooked smoked bratwurst or knackwurst links, cut into 1/2-inch pieces
2 medium potatoes, chopped
1 large onion, chopped
salt to taste
1 Tbsp. pepper
3 cups water
1 head cabbage, shredded
4 cups milk
4 Tbsp. all-purpose flour
11/2 cups gryere swiss cheese, shredded
fresh snipped parsley

In a large sauce pan combine sausage, onion, salt, and pepper. Add water. Bring to boiling. Reduce heat; cover and simmer 20 minutes or till potatoes are nealy tender. Stir in cabbage; cook 10 minutes more or till vegetables are tender. Stir in 4 cups milk and flour into the soup. Cook and stir till thickened and bubbly. Stir in cheese till melted. Garnish with parsley.
