4 to 6 servings


1 can crab meat
1 pound of ground pork
1 large onion
2 pieces of bacon
1 green bell pepper
2 cups of cooked shrimp
1 jalopeno pepper
1 or 2 cloves of garlic
4 teaspoons of thyme
1 bay leaf
2 tablespoons of flour
1 tablespoon file powder
1tablespoon tabasco sauce
1 tablespoon black pepper
1 tablespoon cayanne pepper
3 cups consomme stock
1 teaspoon Worcestershire sauce
1/2 can whole tomatoes
1 celery staulk

Dice bacon and fry with pork on high heat. Add okra, sliced onion, diced peppers(both), cayanne and black pepper, garlic, flour, and cook for 5 minutes or until everything is cooked down. Add consomme, tomatoes, bay leaf, thyme, chopped celery, tabasco sauce, and Worcestershire sauce. Salt to taste. Simmer for 1 hour in a covered pot. Finally, add shrimp and crab meat. Cook for another few minutes(this means more than two and less than five-Ha!) then add file powder.

Hint! It would behoove you to cook all ingredients in a wok or large saute' pan before adding ingedients into a pot. Even though you wind up useing more stuff my reasoning will save you time and grief in the end. A wok or fry pan provides you with more efficient heat displacement at high temperatures which you can more easily keep an eye on while you stir. Secondly, you wont have to worry about burning the bottom of your pot which will not only ruin your gumbo but will also cause you much frustration when you have to clean up your sorry mess. I would and have throwen out pots and pans that I have trashed due to my neglect and laziness. So, save yourself a lot of hassle and keep your piece of mind.
