6 to 8 servings

8 sweet potatoes, pureed
1 lg. yellow onion, diced
1 cup unsalted peanut butter
4 cups chicken or vegetable broth
1/2 cup peanuts, chopped
1/2 cup red and green bell peppers, diced

Quarter sweet potatoes with skin length-wise and boil until soft; approximately half an hour. Strain and save liquid in a separate container. Add chicken broth paste or cubes to liquid. Remove skin from sweet potatoes and pureé in a food processor or blender.

While your sweet potatoes are cooking sauté your onions in a frying pan. Once they are done done pureé them with your sweet potatoes along with your unsalted peanut butter. You can also add your broth while blending to save yourself time.

Your East African Peanut soup should be thick. Once your soup is ready add chopped peanuts and bell peppers to your ampese(broth).

Save a quarter cup of your peanuts and a quarter cup of bell peppers for garnishing before your guest are served.
