Beef Stock

Try making a carmalized rich dark brown beef stock made with a good dark beer that will make your stock have a richer flavor. Thre are two methods in making a good hearty beef stock both of which are equally as good. One can be made on one of those lazy days where you can enjoy the aromas of your cooking without having to think about deadlines or arrends so you can take your time and the second is the quick method where you don't have enough hours in the day but will still impress your guests.


First:
8 ponds beef soup bones
(neck bones, shank bones, marrow bones, and leg bones)
1 large onion, sliced
3 carrots, cut up
3 celery stocks with leaves, chopped
1 large tomato, chopped
12 whole peppercorns
5 sprigs parsely
2 bay leaves
1 whole garlic cluster, broken up
1 tablespoon salt
12 cups water
1 bottle dark beer
1/2 cup molasses
