1 halloumi cheese
2 tbsps well seasoned flour
2 tbsps olive oil
coriander sprigs to garnish
salt and pepper
DRESSING...
juice and zest of 1 lime
1 tbsp white wine vinegar
1 hpd tbsp capers, drained
1 clove garlic, finely chopped
1 hpd tsp grain mustard
1 hpd tbsp chopped coriander
2 tbsps extra virgin olive oil
Instructions...
1) Unwrap cheese and pat dry with kitchen paper. Slice it
into 8 slices using a sharp knife.
2) Prepare dressing by whisking all the dressing
ingredients together in a small mixing bowl.
3) Heat the oil in a frying pan over a medium heat. When
the oil is really hot press each sloce of cheese into
seasoned flour to coat it on both sides. Add to hot pan
as they are done. Cook for one minute on each side -
they should be a good golden colour.
4) Serve straight away on warmed plates with the dressing
poured over.This is good with lightly toasted pitta
bread.
