1 1/4 cups mayonnaise or thick cream
2 tbsps freshly grated horseradish
a sqeeze of lemon or lime juice
1 tsp sugar
a little ground pepper
a little cream to thin dressing if needed
Instructions...
1) Peel the prawns and cut up into chunks. Cube the mango
flesh, then mix the mangos with the prawns.
2) Mix all the dressing ingredients then stir gradually
into the prawn and mango. Stop when the mixture is
nicely bound.
3) Divide between four bowls and serve chilled garnished
with strips of red pepper and mint leaves.
