Recipe: Saganaki (4)

Ingredients...

12 oz kefalotiri or other hard cheese
flour for coating
1 tsp dried thyme
black pepper
4 tbsps olive oil
lemon wedges to serve.

Instructions...

1) Cut the cheese into 8 thick slices. Season the flour with the thyme and pepper and toss the cheese slices until they are evenly coated. Heat the oil in a large frying pan and when it is really hot add the cheese.Fry it for 2 minutes on each side until golden brown.

2) Serve on hot plates with the lemon wedges and plenty of country bread.
