10 slices thinly sliced bread
3 tbsps white sesame seeds
15fl oz groundnut oil
PRAWN PASTE...
1lb raw peeled prawns
1 tsp salt
1 egg
2 tbsps spring onions, finely chopped
2 tsps frsh ginger, finely chopped
1 tbsp light soy sauce
1 tsp sesame oil
Instructions...
1) Chop the prawns coarsely and then mince them finely into
a paste. Put into a bowl and mix in the remaining paste
ingredients.Use afood processor if preferred. If
prepared in advance cover with cling film and
refrigerate.
2) If the bread is very fresh place it in a warm oven to
dry out so it absorbs less oil.Remove the crusts and cut
the bread into rectangles about 3" by 1". Spread the
prawn paste thickly on each peice of bread, to form a
mound about 1/8" deep.
3) Sprinkle the toasts with the sesame seeds.
4) Heat the oil in a deep fat fryer or wok to a moderate
heat. Deep fry several toasts at a time, paste side down,
for 2-3 minutes or until golden. Repeat the process
until they are all done. Drain on kitchen paper and
serve.
