1lb Beef Skirt
5 oz red pepper, coarsely chopped
4 oz onions,coarsely chopped
4 cloves garlic, coarsely chopped
1 tsp shrimp paste
1/2 tsp chilli powder
8 tbsps vegetable oil
2 tbsps Fish Sauce
8 fl oz coconut milk
1/2 tsp salt
4 fresh lime leaves or 3 x 1/2" strips
lemon rind cut into julienne strips
10-15 fresh basil leaves
10-15 fresh mint leaves
Instructions...
1) Cut the beef against the grain into peices 2-3" long, 1"
wide and 1/16 of an inch thick.
2) Combine the red pepper, onions, garlic, shrimp paste and
chilli powder in an electric blender. Blend until smooth,
adding 1 tbsp of water only if you need to.
3) Put oil in a frying pan and set over a medium high heat.
When hot put in the spice paste from the blender. Stir
and fry for 7-8 minutes until the paste turns dark and
separates from the oil.
4) Add the meat and the fish sauce. Stir and cook for 2
minutes.Stir the coconut milk and add that together with
the salt and dried lime leaves or lemon rind.Coarsely
tear the basil and mint leaves and add as well. Stir
once, turn off the heat and serve.
