Recipe:  Lemon Loaf



Ingredients:

1/2 cup sugar
1/2 cup margarine
grated peel of 1 lemon
2 cups flour
1/4 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
3/4 cup buttermilk
1/4 cup lemon juice
2 Tbs. fresh lemon juice
3 Tbs. sugar

Instructions:

Grease loaf pan.  Cream 1/2 cup sugar and margarine.  Add lemon peel and
mix.  Sift dry ingredients and set aside.  Mix buttermilk & 1/4 cup
lemon
juice - set aside.  Add flour and buttermilk mixture alternately to
margarine mixture.  Pour in loaf pan, bake 30 - 45 minutes at 375 deg. 
Let
cool. . . . then. . . .

In a sauce pan, combine 2 Tbs. lemon juice and 3 Tbs. sugar, stir over
low
heat till dissolved.  Pierce top of cake, spoon sugar mixture over top
(this
can get messy). Let it cool and enjoy!
