1) To make the sauce fry the onion and garlic in oil until
soft. Add the tomatoes and simmer for a few minutes
until slightly reduced.Add herbs and seasoning.
2) Put a high sided frying pan on the heat filled with
salted water and vinegar. When it boils break the eggs
in one by one and reduce the heat to simmering.
3) When the white is set, put a spoonful of sauce onto four
dishes. Remove the eggs with a draining spoon and place
on the sauce.
