Recipe: Scrambled Eggs with Tomatoes

Ingredients...

3 tbsps olive oil
4 tomatoes, skinned, deseeded& chopped
a small pinch of sugar
3 garlic clves, bruised
a small pinch fines herbes
8 eggs
4-5 tbsps shredded basil leaves
1 oz butter
salt & pepper

Instructions...

1) Heat the oil in a heavy frying pan and add the tomatoes, sugar, garlic and herbs. Cook over a moderate heat, stirring, until the tomato juices have evaporated. Remove and discard the garlic cloves. Season the tomatoes.

2) Meanwhile lightly whisk the eggs and season. Pour the eggs over the tomatoes. Lower the heat and cook very gently,stirring occasionally with a wooden spoon until the eggs have formed soft curds.

3) Add the basil when the eggs are almost done. Remove from the heat and stir in the butter, cut up small.Serve at once with crusty bread.
