Recipe: Stir Fried Eggs with Corn

Ingredients...

10 oz frozen sweetcorn or peas, thawed
1 tbsp groudnut oil
3 tbsps coarsely chopped spring onions
2 tsps finely chopped root ginger
1 tsp salt
4 eggs, lightly beaten

Instructions...

1) Heat wok and add the oil. Add the spring onions, ginger and salt and stir fry for 10 seconds.

2) Add the corn or peaas and stir fry for 2 minutes.

3) Reduce heat to medium. Add the eggs and cook for a further two minutes. Serve at once.
