Recipe: Tomato Caraway Egg Curry
Ingredients...
2 tbsps vegetable oil
1 medium onion, chopped
4 bay leaves, crumbled
3 large tomatoes, chopped
4 tbsps vinegar
1/2 tsp salt
1/2 tsp cayenne
1/2 tsp carway seeds
8 hard-boiled eggs, halved
4 tbsps chopped fresh chives
Instructions...
1) Heat the oil in a saucepan over a medium low heat. When
hot add the onion and bay leaves and cook until the
onion is tender, stirring occasionally.
2) Add the tomatoes, vinegar, salt, cayenne and carway
seeds and simmer gently for about ten minutes until the
tomatoes are soft.
3) Add the halved eggs and cook for 2-3 minutes. Sprinkle
with chives and serve with plain boiled rice or warmed
pitta bread.
