Recipe: Almond Chicken Ingredients: 2 lbs. boneless chicken breasts, split (4 halves) 1/4 c margarine or butter (I prefer butter) 1/2 cup all purpose flour 1/2 cup sliced almonds 1/2 cup dry white wine 1/4 teaspoon salt 1/8 teaspoon freshly ground black pepper 1/2 teaspoon crushed rosemary leaves (dried rosemary...crumble them in the palm of your hand) Instructions: Saute the almonds in the melted margarine or butter until golden. (a few minutes over med low heat, be careful not to burn them). remove with slotted spoon and put aside. Combine flour, salt and pepper and dust chicken breasts. Shake off excess. Stir rosemary into margarine or butter remaining in skillet and brown chicken on both sides over medium heat. Stir in wine. Cover and cook over low heat 5 to 10 min, or until done. Remove chicken to heated platter. Heat pan juices to boiling. Stir in reserved almonds. Pour or spoon mixture over chicken to serve.
