2 onions , sliced
1-2 hot green chillies, finely chopped
2 garlic cloves, sliced
juice of 2 limes
4 tbsps chopped fresh coriander
6 chicken breast fillets, cut in thick strps
4 red peppers
4 green peppers
1 tbsp olive oil
seasoning
warm wheat tortillas
sour cream & salsa to serve
Instructions...
1) Mix the onions, chillies, garlic, lime juice, coriander
and chicken in a shallow non-metallic dish. Cover and
leave to marinate for at least 30 minutes or overnight.
2) Halve the peppers and grill, cut side down, until the
skins are well charred. Leave until cool then peel off
the skins discarding seeds and stalks. Cut into strips.
3) Brush a heavy based frying pan with oil and heat until
hot. Drain the marinade from the chicken, reserving the
onions.Cook the chicken with the onions and peppers over
a high heat until browned.
4) Serve with warmed wheat tortillas, soured cream, salsa
and lime wedges.Large raw prawns or beef can be used
instead of chicken, or a combination.
