Recipe: Chicken Patties with Ginger & Sesame Seeds
Ingredients...
1 spring onion
1 large clove garlic
1" cube fresh ginger
1lb minced chicken
1 tbsp roasted sesame seeds
1 tbsp sesame oil
1 tbsp soy sauce
freshly ground black pepper
1/4 - 1/2 tsp chilli powder
korean dipping sauce (see Korea/Sauces)
1-2 tbsps vegetable oil
Instructions...
1) Cut the spring onion crossways into very fine rounds
along it's entire length.
2) Peel the garlic and crush it to a pulp. Peel the ginger
and grate it very finely.
3) Put the chicken in a bowl. Add the spring onion, garlic,
ginger, roasted sesame seeds, sesame oil, soy sauce,
black pepper and chilli powder. Mix well and make 5
patties that are about 3 1/2" in diameter. Put in a
single layer on a plate and cover with cling film.
Prepare the Korean Dipping Sauce (see Korea/Sauces).
4) Grease the bottom of a large non stick frying pan with 1
tbsp of the oil and set over a medium high heat. When it
is hot put in the patties in a single layer. Cook for 1
- 1 1/2 mins or until medium brown on one side. Turn and
cook the second side again in the same way. Turn the
heat to medium and cook both sides again for a minute or
so until they are cooked through, (pierce the centre of
one with a sharp knife to check they are cooked). Serve
hot with rice or inside a hamburger bun.
