Recipe: Chicken Pitta with Chilli (2)

Ingredients...

PITTAS...
4 chopped spring onions
4 cloces garlic, crushed
3 tbsps groundnut oil
juice of 1 lemon
1/2 tsp salt
1 tbsp runny honey
1 tsp paprika
1/2 tsp mild chilli powder
1 small red chilli, deseeded& finely chopped
8 oz boneless chicken, cut in 1" cubes

SAUCE...

6 tbsps natural yoghurt
1 tbsp chopped fresh mint
1 tsp paprika
2 spring onions, chopped
hot pitta breads
crisp lettuce

Instructions...

1) Mix together the spring onions, garlic, oil and lemon juice.Add the salt, honey, paprika, dried chilli powder and fresh chilli.Add the chicken and leave for as long as you can, but at least 20 minutes.

2) Mix the ingredients for the sauce.

3) Heat the grill to very hot and scatter the chicken over the grill. Cook the peices until crisp and golden brown on the outside but still juicy within, turning once. This should take about 8 minutes.

4) Put the chicken into hot pitta bread with shredded lettuce leaves and the sauce.
