Recipe: Chicken with Peppers & Cashews (4)

Ingredients...

6 oz chicken breast, cut in 1/2 " dice
1 tbsp cornflour
1 tsp salt
1/2 tsp sugar
1 egg white
1 tbsp hoisin sauce
oil for frying
4 oz cashew nuts
1/2 " ginger, sliced
3 spring onions in 2" lengths
1/2 green and 1/2 red pepper, chopped

Instructions...

1) Mix the diced chicken with the cornflour, salt, sugar, and egg white turning it well. Heat the oil to 180 C. Deep fry the chicken for about 2 mins. Drain on kitchen paper.

2) Deep fry the cashews to a rich golden brown. Drain on kitchen paper.

3) Stir fry the ginger slices with the onions and peppers for about a minute. Mix in the chicken and cook until everything is hot. Stir in the nuts and hoisin sauce to serve.
