1 lb cold cooked chicken in small strips
2 oz butter
2 oz plain flour
1/2 pt milk
1/4 pt chicken stock
salt and black pepper to taste
5 fl oz single cream
1 tbsp dry sherry
lemon juice
2 ripe avocados
1 oz grated cheese
Instructions...
1) Preheat the oven to 200 C Gas Mark 6
2) Melt the butter in a medium sized saucepan. Add the
flour and blend to a smooth paste. Cook for 2 minutes.
3) Gradually stir in the milk, chicken stock and cream.
Bring to a simmer, stirring continuosly. Cook over a low
heat for 2-3 minutes.
4) Remove the pan from the heat and add the chicken peices,
sherry, seasonings and lemonb juice to taste.
5) Halve and quarter the avocados. Remove the skins and the
stone and thinly slice the flesh. Cover the base of a
gratin dish with the slices and sprinkle with a little
lemon juice.
6) Cover with the chicken mixture and then top with the
grated cheese. Cook in the preheated oven for 20-25
minutes until the sides start to bubble.
7) Serve witth baked potatoes or rice and a crisp green
salad.
