Recipe: Crispy Garlic Chicken (2)

Ingredients...

2 chicken legs , each cut into two
6 cloves garlic, peeled
juice of half a lemon
1 1/2 tsps salt
1 small chilli, deseeded & chopped
oil for deep frying

Instructions...

1) Put the chicken joints into a bowl after trimming them of any excess fat.

2) Crush the garlic cloves with the salt and chilli pepper in a small food processor, adding the lemon juice to help work.Spread over the chicken peices after cutting small gashes in the chicken Cover and marinate for several hours.

3) Heat the oil to 190 C. Put the chicken peices into a basket and lower quickly into the oil. Reduce heat to 170 C. Cook for 10 minutes then turn carefully and cook for 5 minutes more. The skin should be dark brown and crispy. I like to serve this with a Rojak.
