Recipe:  Drunken Chicken



Ingredients:

1 large chicken, 3-4 lb., cut in eighths
1/3 cup lemon juice
1/3 cup dry white wine
3 garlic cloves (or more), coarsely chopped
2-3 large onions, sliced

Instructions:

Place the chicken pieces and the next three ingredients in a
zipper-lock bag.  Let marinate in refrigerator at least two hours.
Turn bag occasionally.

45 minutes before serving: Pre-heat broiler.  Set oven rack approx.  4
inches from heat.  Spread onion rings in bottom of large roasting pan
to form a bed for the chicken.  Place chicken pieces on top of onions.
Pour marinade over chicken.  Broil chicken.  Turn when pieces are
browned.  Baste with juices.  Cooking time should be about a half
hour.  Remove from heat.  Cover with foil.  Allow to sit 10 minutes
before serving.
