2 spring onions
1 lb raw minced chicken (or fish or lamb)
1/8tsp turmeric
1/4 tsp red chilli powder
1/2 tsp finely chopped hot green chilli
1/2 tsp salt
black pepper
2 tbsps plain flour
2 eggs, beaten
oil for deep frying
Instructions...
1) Cut off 1" of the white onion like part of the spring
onion and the top very green section. Discard. Cut the
middle sections in half lengthwise and then in fine
crosswise strips.
2) Put the ground chicken in a bowl. Add the turmeric,
chilli, green chilli, salt, pepper, spring onions and
flour and mix well. Add the eggs and mix again. Cover
and refrigerate for at least one hour.
3) Pour oil into a wok to come to 2 " and heat over a
lowish flame.
4) Use 2 soupspoons to make the fritters. Lift up a ball of
the chicken mix about 1" in diameter on front of one
spoon.Release it into the hot oil with the second spoon.
Stir and fry for about 5 minutes until golden brown on
the outside and cooked inside.Remove with a slotted
spoon and drain on kitchen paper.
5) Serve hot with pitta bread, lettuce and tomatoes or with
rice and dal.
