Recipe: Roast Chicken Thighs with Lime Juice & Ginger (2)
Ingredients...
6 chicken thighs
Juice of 4 limes
2 stalks lemon grass, thinly sliced
4 small hot red chillis, seeded and chopped
1" piece ginger, peeled and shredded
4 spring onions, chopped
2 large cloves garlic, chopped
3 tbsps honey
Instructions...
1) Put the chicken pieces in a stainless steel roasting tin.
Cut slashes across the skin, cutting slightly down the
flesh.
2) Mix the lime juice, sliced lemon grass, chopped chillis,
shredded ginger, spring onions, garlic and honey
together. Add 1 tsp salt.
3) Pour the marinade over the chicken pieces and rub it
well into the slits. Set aside for 1 1/2 to 2 hours,
turning the chicken once in the marinade.
4) Heat the oven to 200C. Place the roasting tin in the
oven and cook for 40 - 45 mins until the chicken is
golden and fragrant.
