Recipe: Simple Chicken and Rice Ingredients: 2 Tbsp margarine 1 can clear chicken broth 1/2 C. frozen peas 1 can cream of chicken soup (you can use cream of mushroom) 1 jar Queso (or Cheez Whiz) 1 C. uncooked rice 1/3 C. bell pepper 1/8 tsp black pepper 1/4 C. onion 3/4 lb. boneless, skinless chicken breast, cubed Instructions: In large skillet over medium heat, melt 1 Tbsp margarine and cook chicken till done, stirring often. Remove and set aside. In same skillet, melt remaining margarine, cook rice, bell pepper, and onion till rice is browned stirring constantly. Add broth and Queso bring to a boil, reduce heat cover and simmer for about 20 minutes till rice is just about done. Stir in peas and chicken, cover and cook additional 5 minutes or until rice is tender and most liquid is absorbed, stirring occasionally (will thicken as it cools).
