Recipe: Spicy Chicken Kebabs with Peanut Sauce (4)

Ingredients...

4 med chicken legs or 1 lb breast boned & skinned
1 clove garlic, crushed
1" fresh ginger, finely grated
1/4 oz shallot, chopped finely
4 tsps Chinese light soy sauce
1 tbsp lime or lemon juice
1 tsp ground corriander
1/2 tsp sugar
1/4 tsp chilli powder
peanut dressing

Instructions...

1) Cut the boned & skinned chicken into 1" cubes.

2) Combine garlic, ginger, shallot, soy sauce, lime juice, corriander, sugar and chilli and mix well.

3) Put in the chicken and rub the marinade over the meat. Cover and refridgerate for 2 - 24 hours.
4) Make the peanut dressing (it's under vegetarian/indonesia as well).

5) Preheat grill or barbecue. Divide meat evenly between skewers. Grill for about 5 mins on each side or until the meat is browned.

6) Heat the peanut dressing and beat it lightly.

7) Remove meat from skewers and pour a little dressing over each serving.

8) Serve with rice and vegetables or salad.
