1) Heat the oil in a wok or wide frying pan over a high
heat until hazy then add garlic, shallots, chillies and
galangal or ginger. Stir and fry until the garlic is
lightly browned.
2) Add the chicken and cook, breaking it up, until its
opaque and cooked.Add basil, stir to mix then add the
fish sauce and sugar. Stir for a minute to mix well then
serve with steamed rice.
