Recipe: Bannana, Toffee & Pear Crumble (6)

Ingredients...

500 gm firm pears, pealed & cut into 5-6 slices
50 gm + 1 tbsp of light muscovado sugar
1 tbsp lemon juice
4 bananas, thinly sliced
4 heaped tbsps dulce de leche (or caramelised condensed milk)
50 gm butter
50 gm porridge oats
25 gm walnuts, chopped
3 tbsps sunflower oil

Instructions...

1) Place the pears in a suacepan with 1 tbsp sugar and 1 tbsp lemon juice. Cook covered for 5 - 10 mins until just tender. Remove the lid and cook for a further 2 - 3 mins.

2) Place the bananas in an oven dish. Top with the toffee, spreading all over. Tip over the pears and any juices.

3) Place the flour in a bowl. Rub in the butter then stir in the oats, nuts and remaining sugar. Add the oil and combine well. Tip this over the pears and press down gently.

4) Bake in a preheated oven, 200C (Gas Mark 6) for about 45 mins until golden brown. Leave for at least 10 mins then serve with custard.
