Recipe:  Basic Yellow Cake

Ingredients:

2 1/4 cups cake flour (Scoop into measuring cup and level off top)
 2 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup vegetable shortening
1 1/4 cup sugar
2 eggs
2/3 cup milk
2 teaspoons vanilla extract

Instructions:

Grease and flour 2 8-inch round cake pans. Preheat oven to 350
degrees.
Combine dry ingredients in a bowl and mix with a fork to aerate. Sift
mixture on to a sheet of wax paper. Cream the shortening and sugar
together
and beat until fluffy. Beat in eggs once at a time. Beat in vanilla.
Add
dry ingredients and milk alternately in 3 additions. Beat well. Pour
into
prepared pans. Bake for 20 minutes, test with a toothpick for doneness.
(Toothpick should come out dry when inserted in center.) It may require
up
to 25 minutes baking time. Cool in pans on a rack for 5 minutes. If
cake
hasn't pulled away from sides of pan, run a thin knife around  edges
before
turning out onto rack to cool completely.  Frost as desired.
