Recipe:  Chocky Mud Muffins



Ingredients:

1 cup/125 g/4 oz self raising flour
1/2 tsp baking powder
4 tbsp cocoa
1cup/250 g/8 oz sugar
1/4 cup/ 60 ml/2 fl oz skim milk
1/2 cup/100g/3 1/2 oz low fat natural yoghurt
2 egg whites
1 egg yolk
1 tsp vanilla essence

Instructions:

Sift together flour, baking powder and cocoa powder into a bowl.
Add sugar and mix to combine.  Stir in milk, yoghurt, egg whites,
egg yolk and vanilla essence.  Lightly spray 12 non-stick muffin
pans with cooking oil spray (I use patty cases so no oil necessary!)
Spoon in mixture and bake at 180 C/350 F for 15-20 minutes or until
cooked when tested with a skewer.
