Recipe:  Flourless Chocolate Cake



Ingredients:

3 1/3 ounces unsalted butter
10 ounces semisweet chocolate
8 extra-large egg yolks
8 extra-large egg whites
3/4 cup sugar

Instructions:

Melt butter and chocolate in top of double boiler over hot water,
stirring constantly; remove from heat. Beat in egg yolks. Beat egg
whites in large mixer bowl until soft peaks form. Add sugar gradually,
beating until stiff peaks form. Fold in chocolate mixture. Pour into
greased and lightly floured 9-inch springform pan. Bake at 325 degrees
for 40 minutes or until firm but not cracked. Cool in pan for 1 minute.
Remove to serving plate; let stand until cool. Yield: 12 servings.

This is really good with whipped cream (use real whipping cream) and
fruit such as strawberries or raspberries. If you have wheat and gluten
