Recipe: Marmalade Bread and Butter Pudding (4 - 6)

Ingredients...

6 slices good quality white bread, 1/2" thick
2 oz softened butter
2 rnd tbsps seville orange marmalade
10 fl oz whole milk
2 1/2 fl oz double cream
creme fraiche or pouring cream to serve
3 size 1 eggs
3 oz sugar
grated zest of 1 large orange
1 lvl tbsp demerara sugar
1 oz candied peel, chopped finely

Instructions...

1) Preheat the oven to 180 C Gas 4. Butter a 72 by 9" Baking dish.

2) Generously butter the slices of bread on one side the spread the ,marmalade on 3 of these slices. Put the other 3 slices on top to make three sandwiches. Spread some butter on the top slice of each sandwich.Cut each one into quarters.

3) Arrange the sandwiches, butter side up, overlapping each other in the baking dish and standing almost upright.

4) Whisk the milk, cream, eggs and sugar together and pour all over the bread. Scatter the surface of the bread with the grated orange zest, demerara sugar and candied peel.

5) Bake on a high shelf for 35-40 minutes until pufy and golden, and the top is crunchy.

6) Serve hot with creme fraiche or pouring cream.
