Recipe:  Microwave Rice Pudding



Ingredients:

1/2 cup uncooked instant rice
3 eggs, slightly beat
2 tsp vanilla
1/2 cup sugar
2 cups milk
1/4 tsp salt
1/2 cup raisins
cinnamon

Instructions:

Prepare instant rice according to directions for microwave on package.
Cover and let set 5 minutes.  In another bowl, beat eggs, sugar,
vanilla and
salt. Gradually stir in milk.  Mix in rice and raisns.  Pour into one
and
one half quart glass casserole; sprinkle with cinnamon.  Cover with wax
paper.  Cook on 50% (simmer) for 12-14 minutes.  When cooked center may
be
slightly soft but will set as pudding cools.  Serve warm or cold. 
Serve 6-8
