Recipe: No-Bake Apple Walnut Goodies

Ingredients:

3 cups Quick Oatmeal
1 cup Walnuts, chopped
1/2 tsp. Almond Extract
1/2 tsp. Vanilla Extract
1 cup Applesauce
1 1/2 cups Granulated Sugar
1/2 cup Butter or Margarine
1/4 cup Cocoa Powder
1/4 tsp. Salt

Instructions:

In a large bowl, combine oatmeal, walnuts, and extracts. Set aside for use later. Heat applesauce in a saucepan over medium heat for about 5 minutes until thoroughly warmed. Add sugar, butter, cocoa, and salt. Bring the mixture to a boil, stirring constantly for about 1 minute. Remove the mixture from heat source and immediately add it to the reserved mixture of dry ingredients. Thoroughly combine all ingredients with a wooden spoon. Drop by the teaspoonful onto waxed paper. When cooled and a bit firm, roll in confectioner's sugar, if desired. Store in an air-tight container or refrigerate. Or pass around the dorm room and don't worry about leftovers –– students rarely possess them.
