1 cup Brown Sugar, firmly packed
1 cup Vegetable Oil
2 Whole Eggs
2 cups Uncooked Oatmeal
1 1/2 cups Whole-Wheat Flour
1 tsp. Baking Soda
1 cup Chocolate Chips
1 cup Raisins or Chopped Dates
1 cup Crushed Walnuts, Almonds, or Flaked Coconut
1 1/2 tsp. Cinnamon
1 1/2 tsp. Ground Cloves
1/4 tsp. Salt
Non-Stick Cooking Spray
Instructions:
In a large mixing bowl combine brown sugar, oil, and eggs by blending
with a wooden
spoon. Stir in oatmeal, whole-wheat flour, baking soda, chocolate
chips, raisins or dates,
nuts or coconut, cinnamon, cloves, and salt. Thoroughly combine all
ingredients.
Spread some of the mixture in a 1-inch by 15-inch jellyroll pan that
has been lightly sprayed
with a non-stick vegetable oil. Bake in a pre-heated 350-F degree oven
until the center is
just set, about 18 to 22 minutes. Cool at least 15 minutes in the pan
before repeating the
baking process with the next batch.
Kitchen Staff Tips: Before you remove the granola bars from the baking
pan, you may
elect to drizzle them with a Honey Glaze. To do so, heat 1/4 cup honey
with 2 tablespoons
butter in a 1-quart saucepan over medium heat until the butter is
melted. Stir, then drizzle
over the baked granola bars. Cool slightly, then cut into 3-inch by
1-inch bars.
You may also substitute ingredients with reckless abandon in nearly any
combination.
You've essentially added 3 cups of dried ingredients when preparing the
original recipe,
including the chocolate chips, raisins, and nuts. Feel free to try
different concoctions.
For example, substitute butterscotch or peanut butter chips with
almonds or other dried fruits,
including "crasins," for fantastically original combinations from your
own kitchen!
