2 tsp coriander
1 large red onion, chopped
2 garlic cloves, crushed
1 - 2 hot chillies, finely chopped
1 lb very ripe tomatoes, chopped, or:-
14 oz can chopped tomatoes
4 tbsps fresh corriander, chopped
seasoning
Instructions...
1) Dry fry the corriander seeds in a heavy based frying pan
for a few minutes, then crush using a pestle and mortar.
2) Mix together the crushed corriander seeds, onion, garlic,
chillies, tomatoes, corriander and seasoning. Cover and
leave to stand for at least 30 mins or preferably
overnight.
