Bechamel sauce made with 1 pt milk
6 oz mature cheddar, grated
a pinch of grated nutmeg
1 oz butter
2 oz finely grated parmesan
12 oz macaroni
salt & pepper
1 1/2 oz breadcrumbs
Instructions...
1) Preheat oven to 220 C Gas 7. Make the Bechamel sauce and
add the cheddar cheese and nutmeg. Season with salt and
pepper.
2) Grease an ovenproof dish with the butter and coat with a
mixture of the breadcrumbs and parmesan cheese, keeping
some for the top.
3) Cook the macaroni until it is barely al dente. Drain
well and pour half the macaroni into the prepared oven
dish. Cover with half the sauce. Add the rest of the
macaroni and the remaining sauce. Sprinkle the
breadcrumb mixture on top.
4) Bake in a preheated oven for 20 mins. Finish by browning
under the grill if desired.
