Recipe: Pasta with Three Cheeses (4)

Ingredients...

16 oz orechiette or other pasta
2 onions, sliced
5 tbsps olive oil
5 oz mozzarella, diced
4 oz dolcelatte, diced
2 oz freshly grated parmesan
2 tbsps chopped parsley
salt & pepper

Instructions...

1) Tip the pasta into boiling salted water and cook until al dente.

2) Meanwhile fry the onions in 3 tbsps of the olive oil until nicely browned. Set aside with their oil and reheat as soon as the pasta is cooked.

3) Drain the pasta and while it is still piping hot tip it into a bowl and toss with the cheeses, fried onions, pepper and a little bit of salt.

4) Sprinkle with parsley and serve.
