2 lb mussels or clams
4 scallops (optional)
1/2 lb small squid
1/2 scampi or prawns
3 cloves garlic, finely chopped
3 tbsps olive oil
1 hot red chilli, finely chopped or crumbled
4 tomatoes, peeled and chopped
1/2 pt dry white wine
salt & pepper
bunch of parsley, finely chopped
1 1/4 lb small spaghetti or thin noodles
Instructions...
1) Clean the mussels or clams and steam them open. When
cool remove from shells. Filter and resrve any remaining
liquid. Clean squid and cut into rounds. Shell prawns.
2) Fry garlic in oil until it begins to colour. Add the
chilli and tomatoes, the reserved liquid and the wine.
Season and simmer for ten minutes to reduce a little.
3) Add squid and prawns and cook for a few minutes until
the prawns turn pink and the squid opaque. Add the
mussels or clams and the scallops and the parsley. Heat
through when the pasta is ready to serve.
4) Cook the pasta in plenty of boiling salted water until
al dente and se rve with the sauce. Add a pinch of
saffron to the sauce if desired while cooking.
