12 oz thin spaghetti
5-6 tbsp green olive oil
1 small onion, chopped very finely
2 cloves garlic, chopped very finely
2 oz parsley, chopped very finely
1 tsp salt
a good pinch dried oregano
black pepper
1 oz butter
5 tbsps breadcrumbs
Instructions...
1) Start heating the water for the pasta. While it boils
and the pasta is being cooked al dente prepare the sauce.
2) Heat 3 tbsps of the oil in a frying pan and saute the
onion, garlic and parsley until lightly coloured. Add
the salt, oregano and lots of pepper.At the same time
heat the remaining oil and the butter in a small frying
pan and saute the breadcrumbs until golden.
3) Drain the pasta and put in a warmed serving dish. Por
over the hot parsley and oil sauce and sprinkle with the
breadcrumbs. Serve at once.
