Recipe: Spaghetti with Eggs, Cheese & Breadcrumbs

Ingredients...

4 tbsps olive oil
1 onion diced in 1 cm squares
1/2 tsp red chilli flakes
salt
2 cloves garli, finely chopped
12 green olives, chopped small
2 tbsps parsley, chopped
2 eggs
4 tbsps grated parmesan
3/4 cup tiny croutons or coarse breadcrumbs
3 tbsps butter
8 oz spaghetti
3 oz smoked cheese, grated
pepper

Instructions...

1) Bring a pot of water to the boil for the spaghetti.

2) Heat the oil in a frying pan and add the onion and chilli flakes. Cook over a medium high heat, stirring often, until the onion is nicely browned. Season with salt.Turn off heat. Add garlic and stir for 20 seconds. Scrape contents into a large bowl and add olives and parsley.

3) Beat the eggs in a small bowl with the parmesan.Fry the croutons or breadcrumbs in butter until crisp and golden.

4) When ready to cook spaghetti salt the water and add pasta. Cook until al dente. Strain well then add to the bowl with onion.Pour in eggs and toss well to coat the pasta and cook eggs. If the eggs dont cook heat gently, stirring, in a non stick pan until cooked.

5) Stir in the smoked cheese and season with black pepper. Add the breadcrumbs or croutons and serve.
