Recipe: Thin Pasta with Prawns

Ingredients...

12 oz linguine or similar pasta
3 oz butter
12 oz peeled prawns
1 tbsp curry powder
4 tbsps white wine
1/2 pt fish or chicken stock
2 egg yolks and 1 whole egg
4 oz freshly grated parmesan or mature cheddar
4 tbsp finely chopped mint
salt and black pepper

Instructions...

1) Start the pasta cooking. Heat half the butter in a large frying pan and saute the prawns and curry powder together for a few minutes. Add the wine and boil over a high heat to reduce. Add Stock.

2) Mix together eggs and cheese in a small bowl. When the pasta is cooked al dente drain lightly and pour into the frying pan. Cut the remaining butter into peices and add together with the egg and cheese mix.

3) Stir over a low heat until the sauce thickens and coats the pasta. \season to taste, toss with the mint and serve.
