Recipe: Green Sauce

Ingredients...

2 finely diced shallots
1/2 cup mixed herbs, finely chopped e.g.thyme,chervil,lovage, hyssop, rocket,dill,tarragon, basil,marjoram
salt & pepper
1/2 cup flat leafed parsley,finely chopped
grated peel of a lemon
3/4 cup virgin olive oil
champagne vinegar or lemon juice to taste
1 tbsp capers, rinsed & chopped

Instructions...

1) Combine all of the ingredients and season to taste . If the sauce is not to be used immedietely wait until the last minute to add the vinegar or lemon juice.
