Recipe: Mango Salsa (2)

Ingredients...

1 large red pepper
1 large ripe mango
juice of 1/2 lime
1 small red onion, chopped finely
1 tsp sugar
1/2 " ginger, peeled
1 small red chilli, deseeded
1 tbsp coriander leaves, chopped

Instructions...

1) Cut the pepper in half and remove seeds. Grill skin side up until the skin chars. Remove from the heat and cool slightly. Peel away the skin then finely chop flesh.

2) Peel the mango and cut the flesh into very small dice. Put in a bowl with the onion and lime juice. Sprinkle with the sugar.

3) Grate the ginger and stir in. Chop the chilli finely and add to the other ingredients. Stir then set aside for 15 minutes.

4) Stir in the coriander leaves just before serving.
