4 oz roasted peanuts
2 cloves garlic, finely chopped
1 oz shallots, finely chopped
2 tbsps vegetable oil
freshly ground black pepper
1/2 tsp chilli powder
1/2 tsp salt
2 tsps dark brown sugar
4-5 tsps lime juice
Instructions...
1) Grind peanuts finely.
2) Put oil in a small pan over medium heat. When hot add
garlic and shallots. Stir and fry for about 1 minute
until medium brown. Add 15 fl oz water, chilli powder,
salt, sugar and ground peanuts. Stir and bring to the
boil. Turn heat to medium/low and simmer for 15-20 mins
until thickened, stirring now and then.
3) Allow to cool a little. Add the black pepper and beat in
the lime juice. Check seasoning.
