Recipe: Courgette and Crab Salad (4)

Ingredients...

1 lb courgettes
4 oz fresh crabmeat
1 small tomato, seeded and chopped

DRESSING...

4 tbsps olive oil
juice of 1/2 lemon
6 large basil leaves
salt and pepper

Instructions...

1) Cut the courgettes into 1/2 " slices. Spread out in a colander and sprinkle with al ittle salt. Leave to drain for 30 minutes then rinse and pat dry.Steam or simmer in salted water until just tender and drain well.

2) Put all the dressing ingredients in a screw top jar. Shake well and adjust seasoning. Toss the hot courgettes in the dressing and leave to cool.When cool, drain excess dressing from cougettes and arrange them on a large serving plate.

3) Moisten the crab meat with 1-2 tbsps of the dressing and pile up in the centre of the courgettes. Sprinkle the tomato over the top. Serve lightly chilled.
